This small restaurant is off the beaten track and is a true gem
amongst the other restaurants in town. The name Evo is the acronym of one of the symbolic products of Puglia, extra virgin olive oil. Located in Alberobello, the capital of Trulli, where the kitchen draws inspiration from tradition. The talented chef recreates innovative dishes from the combination of ancient flavours with the most modern and refined tastes.
Everything starts from the experimentation of the best raw ingredients that the territory can offer and Evo’s Bio vegetable garden and exclusive choice of Apulian wines, they truly support local micro productions.
The menu is vast, where you can enjoy a 7, 5 or 2 course tasting
menu. Our favourite to try is the Lamb Carpaccio, with fennel seed oil and palagianello horned cucumber sauce.

If you’re starting your day here, enjoy a cafeteria of fresh coffee with an exquisite offer of sweet and savoury pastries. By lunchtime, the restaurant will delight with a menu of local dishes created by chef Stefano Carcagni. Appreciated for the
freshness of ingredients and creativity in the preparation. You must visit for the sushi though, being renowned in Lecce for it’s raw local materials and home-made sauces such as Uramaki with a goats cheese cream, purple shrimp and semi-dry tomato.
Come nightfall, 300 Mila also boasts a multi-award-winning bar for those apres sun drinks. With a selection of over 500 gins to choose from, as well as an extensive wine cellar and cocktails prepared by Rossella Lanza, the expert behind the bar.
